True artisanal bbq means arriving early for the 30 hour cook. Sometimes as early as 1AM. To endure the 14 to 16 hours of heat and smoke that it will face, the beef must be trimmed to uniform specifications.

Seasoned oak is Cryderman’s fuel of choice and is a primary feature in this video story telling advertisement. They choose local Brevard County wood they have sourced, cut, and split. Smaller, drier pieces of wood build the foundation and greasy butcher paper that blanketed yesterday’s briskets ignites the flame. Throughout the cook, selecting logs that have the appropriate moisture content and size will become increasingly important to fuel the fire and maintain the desired temperature.

The meat is the real star in quality barbecue. A subtle rub of kosher salt and coarse black pepper is all it takes.

There is no replacement for experience. Arranging the beef effectively on the cooker takes “time on the tools”. The variables in this process are near infinite. No two cuts of meat are the same.
